“The Socorro Community Kitchen was a god send. It’s a certified commercial kitchen that has passed all regulations. I didn’t have to try doing it at home. It has two large mixers, refrigerator storage for sourdoughs that need overnight proofing. It was two large steam convection ovens that allowed between six and eight loaves to bake at once. When I made sourdough bagels, there’s a steam kettle to boil them. I highly recommend it for anyone wanting to start a bakery. It worked for me.”
